Barramundi with Mango sauce

Ingredients :
- 1kg (2¼lb) barramundi fillet, trimmed and cut into 4 pieces
- 1 cup puréed mango
- ¼ onion, finely diced
- nutmeg and ground ginger, to taste
- 1 tbsp plum sauce
- 2 tbsp cream
Preparation and Cooking Instructions :
- For Mango sauce : Finely dice the onion and cook until tender.
Add the mango puree and stir.
- Bring back to the boil then simmer for about a minute. Remove from
the heat and add plum sauce, ginger and nutmeg.
- Just before serving, add the cream and mix thoroughly.
- For Barramundi : Lightly grill the fish.
- Prepare the rice, adding mixed vegetables to the rice for color and
taste if desired.
- Serve the fish on a bed of rice accompanied by steamed vegetable in
season and garnish with fresh parsley.
- Spoon Mango sauce over the fish.
