Cockle and Broccoli salad

Ingredients :
- 1 kg cockles
- 500g broccoli
- 2 tbsp lime juice
- 1 small onion, finely chopped
- 1 medium red pepper
- ½ tspn sugar
- 150g can coconut cream
- 1 small fresh red chili, finely chopped
Preparation and Cooking Instructions :
- Add enough cold water to large saucepan to cover base by 1cm, add
cockles, cover, bring to boil, reduce heat, simmer, uncovered, for about
1 minute (or microwave in HIGH for about 1 minute ) or until
shells are just opened.
- Remove flesh from shells, remove and discard beards, cut cockles in
half. Boil, steam or microwave broccoli until just tender, drain, cool.
Combine cockles, broccoli, juice, onion, pepper,sugar, cream and chili
in serving bowl, refrigerate before serving.
