Cuttlefish with Tamarind Lemon Grass sauce

Ingredients :
- 750g cuttlefish
- ¼ cup plain flour
- 1 tspn paprika
- 2 tbsp oil
for Tamarind Lemon Grass sauce :
- 1 lemon grass stem
- 2 cloves garlic, finely chopped
- 1 tbsp lime juice
- 1½ tbsp hoisin sauce
- 1 tspn anchovy sauce
- 1½ tbsp tamarind sauce
Preparation and Cooking Instructions :
- Cut inside of cuttlefish in diamond pattern; do not cut right through.
Then cut into 1cm strips. Toss cuttlefish in combined flour and paprika,
shake away excess flour.
- Heat half the oil in large frying pan until very hot. Add half the
cuttlefish, stir-fry over high heat for about 30 seconds or until lightly
browned and tender, drain on absorbent paper. Repeat with remaining
oil and cuttlefish. Serve with sauce.
- For Tamarind Lemon Grass sauce : Remove tough outer leave from
lemon grass, chop in half, discard woody center. Coarsely chop tender
white part of lemon grass, garlic, juice and sauces until finely chopped.
