Mixed Bean and Fish salad

Ingredients :

  • 6 oz French beans
  • 14½ oz can flageolet beans
  • 1 red onion, halved and thinly sliced
  • 1 tbsp oregano, chopped
  • 2 tbsp parsley, chopped
  • 8oz cooked salmon fillet, chilled
  • 8oz cooked monkfish, chilled
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic, crushed


Preparation and Cooking Instructions :

  1. Top, tail and halve the French beans. Cook for 3 minutes in a pan of boiling salted water. Drain. Rinse under cold water and drain again.
  2. Drain and rinse the flageolet beans.
  3. Put the French beans, flageolet beans, onion slices and herbs into a salad bowl.
  4. Cut the salmon and monkfish into pieces. Carefully stir in the bowl.
  5. Whisk the remaining ingredients together. Pour over the salad and toss gently.
