Mixed Bean and Fish salad

Ingredients :
- 6 oz French beans
- 14½ oz can flageolet beans
- 1 red onion, halved and thinly sliced
- 1 tbsp oregano, chopped
- 2 tbsp parsley, chopped
- 8oz cooked salmon fillet, chilled
- 8oz cooked monkfish, chilled
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, crushed
Preparation and Cooking Instructions :
- Top, tail and halve the French beans. Cook for 3 minutes in a pan
of boiling salted water. Drain. Rinse under cold water and drain again.
- Drain and rinse the flageolet beans.
- Put the French beans, flageolet beans, onion slices and herbs into
a salad bowl.
- Cut the salmon and monkfish into pieces. Carefully stir in the bowl.
- Whisk the remaining ingredients together. Pour over the salad and
toss gently.
