Serves : 4 x 8" or 2 x 12" pizzas
Ingredients
- ¾ lb diced lobster meat
- ¾ lb scallops
- ¾ lb large shrimps, peeled and deveined
- 4 cups chicken broth
- 2 tbsp butter
- 4 oz mushrooms, sliced
- 1 onion, finely diced
- 2 cups Mornay sauce
- 1 quantity Herb pizza

- 2 tbsp olive oil
- 2 cups grated Havarti cheese
- ¾ cup Béarnaise

Preparation and Cooking Instructions
- Cook lobster, scallops and shrimp in the stock taking care not to
overcook to prevent seafood from becoming tough. Drain and cool.
- Heat butter in a saucepan. Sauté the mushrooms and onions
until tender. Add Mornay sauce and simmer until sauce thickens.
- Preheat the oven to 450°F. Pan the crust according to instructions.
Brush with the oil. Spread with the seafood, then with the Mornay sauce.
Sprinkle with cheese.
- Bake 12 minutes. Cover with the Béarnaise sauce and continue
to bake for an additional 3-5 minutes or until sauce browns nicely.
- Remove from the pan, slice and serve.
