Ingredients :
- 300g butter
- 1¼ cups icing sugar
- 1 cup cornflour
- 2½ cups plain flour
Preparation and Cooking Instructions :
- Preheat oven to 160°C.
- Using a food processor, cream together the butter and icing sugar.
Then, add the sifted cornflour and flour and combine well.
- Remove from bowl and roll into a thick sausage shape on cutting board.
Using a sharp knife slice the shortbread into 1cm slices.
- Place onto lightly greased paper-lined baking sheet. Then, using a
fork, prick the slices a few times - this is to help them cook in the
center. Bake shortbread for 25 to 30 minutes.
- Remove from oven and cool on a cake rack.
