Shortbread recipe

Ingredients :

  • 300g butter
  • 1¼ cups icing sugar
  • 1 cup cornflour
  • 2½ cups plain flour


Preparation and Cooking Instructions :

  1. Preheat oven to 160°C.
  2. Using a food processor, cream together the butter and icing sugar. Then, add the sifted cornflour and flour and combine well.
  3. Remove from bowl and roll into a thick sausage shape on cutting board. Using a sharp knife slice the shortbread into 1cm slices.
  4. Place onto lightly greased paper-lined baking sheet. Then, using a fork, prick the slices a few times - this is to help them cook in the center. Bake shortbread for 25 to 30 minutes.
  5. Remove from oven and cool on a cake rack.
