Smoked cheese and pepper soufflé

Ingredients :

  • ¼ cup breadcrumbs
  • 2oz butter
  • ¼ cup plain flour
  • 1½ cups milk
  • 4 egg yolks
  • ¼ cup bottled green jalapeño peppers, drained and chopped
  • ½ cup grated smoked cheese
  • 6 egg whites

Preparation and Cooking Instructions

  1. Grease 6 ovenproof dishes - 1 cup capacity - sprinkle with breadcrumbs, shake away excess breadcrumbs. Melt butter in pan, add flour, cook, stirring, until mixture bubbles. Remove from heat, gradually stir in milk. Stir over heat until mixture boils and thickens; transfer to large bowl; cool 5 minutes. Stir in egg yolks, peppers and cheese.
  2. Beat egg whites in medium bowl with electric mixer until soft peaks form. Fold egg whites into pepper mixture in 2 batches. Spoon mixture evenly into prepared dishes; place dishes on oven trays. Bake in moderately hot oven about 20 minutes or until soufflés are browned.
