Sole with bananas ~ Bapa Ng May Saging

Ingredients :
- 6 sole fillets
- salt and pepper to taste
- ½ lemon
- 1 egg, beaten
- breadcrumbs
- 90g butter
- 3 firm bananas
- parsley
Preparation and Cooking Instructions
- Wash and dry the fillets, season with salt and pepper, squeeze a few
drops of lemon juice on each. Dip in the beaten egg and then in the
breadcrumbs. Heat the butter and fry the fillets until golden on both
sides, drain and keep hot. Peel bananas, cut in half lengthwise, sprinkle
with lemon juice and fry in butter, just to soften the fruit. Do not
overcook or they will become misshapen and difficult to handle. Put
half a banana on each sole fillet and serve immediately sprinkled with
parsley.
- Any flat fish such as plaice, dab or brill can be used instead of
sole.
- Cooks notes : Instead of using fillets and frying in breadcrumbs,
grill the seasoned fish whole and serve with sliced bananas.
