Spiced chicken with fruity couscous

Ingredients :
- 4 single chicken breast fillets
- 2 tspn ground cumin
- 2 tspn ground coriander
- ½ tspn salt
- 2 tbsp plain flour
- 2 tbsp olive oil
- ½ cup orange juice
- 1½ cups chicken stock
- 1 tspn sugar
- 1 cup water
- 2oz butter
- 2 cups couscous
- ½ chopped dried apricots
- ¼ cup sultanas
Preparation and Cooking Instructions
- Dip the chicken into the combined cumin, coriander, salt and flour.
Heat the oil in a large frying pan, add the chicken and cook, covered,
until browned on both sides and cooked through. Remove from pan, cover
to keep warm.
- Add the juice, ½ cup of the stock and sugar to the same pan
to make sauce; simmer, uncovered, for about 5 minutes or until thickened
slightly.
- Meanwhile, bring remaining stock and water to the boil in a large
saucepan, add the butter, then pour liquid over the combined couscous,
apricots and sultanas in a large heatproof bowl. Cover and stand for
about 5 minutes or until all the liquid is absorbed; fluff with a fork.
- Serve the chicken with the sauce, couscous mixture and steamed green
beans.
