Spiced duck with cabbage and potatoes ~ Badhak buffado

Serves : 4-5


Ingredients :

  • 1 x 4lb duck
  • 2 tbsp oil
  • 1 large onion, sliced
  • 4 whole cloves
  • 4 cardamom pods
  • 1 small stick cinnamon
  • 1 tspn finely grated fresh ginger
  • 1 tspn turmeric
  • ½ tspn ground pepper
  • 2 tspn ground coriander
  • 2 fresh red or green chilies
  • 2 tspn salt
  • 2 cups hot water
  • 2 tbsp vinegar
  • 4 potatoes, peeled
  • half a cabbage, cut into wedges
  • 1 cup fresh or frozen peas

Preparation and Cooking Instructions

  1. Cut the duck into serving pieces.
  2. Heat oil in a large, heavy saucepan and fry onion and whole spices until onion is golden. Add ginger, turmeric, pepper and coriander and fry for a minute or two longer, then add the duck and fry until the pieces are slightly browned.
  3. Add the whole chilies, salt, water and vinegar. Cover tightly and simmer for 45 minutes or until duck is almost tender. Skim off any excess fat.
  4. Add potatoes and cook 10 minutes, then add cabbage and cook for a further 10 minutes. Lastly add peas, taste and adjust seasoning if necessary, cover and cook until peas are done. Serve hot.
