Mediterranean Spinach Pie

Serves : 4-6
Ingredients :
- 1 bunch English spinach, washed and chopped
- ¼ cup olive oil
- 1 onion, finely chopped
- 6 green onions, chopped
- 125g Feta cheese, crumbled
- ¼ cup grated parmesan cheese
- seasoning to taste
- 1 tbsp chopped mixed herbs
- ¼ tspn ground nutmeg
- 4 eggs, lightly beaten
- 90g butter, melted
- 10 sheets filo pastry
Preparation and Cooking Instructions
- Place spinach in a large saucepan. Heat, covered, over a high heat
for 3 to 5 minutes, shaking occasionally (it will cook in the water
remaining on the washed leaves). Drain well in a colander, pressing
occasionally with a spoon. Set aside.
- Heat oil in a frying pan. Sauté onions for 3 minutes or until
tender.
- Place onions, spinach, cheeses, seasonings, herbs and nutmeg in a
large mixing bowl. Blend well to combine. Stir in eggs.
- Brush a 25 x 30cm baking dish with a little of the butter. Line with
a sheet of filo, brushing with butter. Top with another 4 sheets, brushing
each sheet with butter.
- Pour filling on top of pastry, spreading evenly. Top this with remaining
pastry, brushing each sheet with butter.
- Tuck pastry in on all sides of the dish. Score top of pie with a sharp
knife if desired.
- Bake in a moderate oven (180°C) for 30 to 35 minutes or until
puffed and golden. Cut into squares and serve with salad and crusty
bread.
