Ingredients :
- 3 shallots, peeled and chopped
- 3 cloves of garlic, peeled and crushed
- 1 tbsp olive oil
- ½ pint white wine
- 3 fl oz Pernod
- 6½ lb mussels, cleaned
- 1 oz fresh parsley, chopped
Preparation and Cooking Instructions
- Gently fry the shallots and garlic with the oil, making sure they
dont color. Stir in the wine and Pernod, bring to the boil and
boil for 2 minutes.
- Add the cleaned mussels and simmer until they open.
- Remove from the heat and discard any that do not open.
- Stir in the chopped parsley and then divide between serving bowls,
spooning the cooking liquor over the mussels. Serve with crusty bread
- Note for the cook : Pernod is a brand of liqueur flavored with
anise. If it is unavailable, substitute another anise-flavored liqueur.
