Sweet and sour lobster with pineapple ~ Tong Cho Loong Har

Serves : 4    Preparation time : 5 minutes + 20 mins standing    Cooking time : 8 minutes

Ingredients :

  • 500g lobster meat
  • salt
  • 2 tbsp sugar
  • 2 tspn soya sauce
  • oil for deep frying
  • 2-3 tbsp plain flour
  • 2 eggs, lightly beaten
  • 250g can pineapple cubes, drained
  • 2 tspn peanut oil
  • water
  • 2 tbsp vinegar
  • 2 tspn cornflour

Preparation and Cooking Instructions

  1. Cut lobster into bite-sized pieces. Sprinkle with 1 tspn salt, 1 tspn sugar and the soya sauce and leave to marinate for 20 minutes
  2. Heat the oil and while it is heating, roll the lobster pieces lightly in flour, then dip into beaten egg and drop them one by one into the hot oil. Deep-fry until golden and drain on greaseproof paper.
  3. While the lobster pieces are cooking, cut pineapple cubes in half and prepare the sauce.
  4. Mix together in a pan the peanut oil, 2 tbsp water, vinegar, the rest of the sugar and 1 tspn salt. Bring to the boil, add pineapple pieces, and cornflour blended with enough water to make a thin paste. Remove from heat, put in the lobster pieces; make sure they are well immersed in the sauce, and serve immediately with boiled rice or prawn crackers.
