Ingredients :
- 2 kg swordfish steaks
- 1 mango, peeled and diced
- 1 medium tomatillo, husked, washed
- ½ red capsicum, seeded and minced
- 2 tbsp fresh coriander, finely chopped
- 2 tbsp lime juice
- ground black pepper, to taste
Preparation and Cooking Instructions :
- For relish : Combine the mango, tomatillo, capsicum, coriander
and lime juice. Set aside.
- Place the fish on a rack in a baking pan or use a grill pan and sprinkle
fish with pepper. Bake in a preheated 220ºC oven for 12 minutes
per inch of thickness. Serve with the relish on the side.
