Tomato garlic prawns

Serves : 4  Preparation time : 40 minutes  Cooking time : 30 minutes

Ingredients :

  • 1kg medium uncooked prawns
  • 1 tbsp olive oil
  • 25g butter
  • 1 medium red onion, finely chopped
  • 3 cloves garlic, crushed
  • 2 tbsp dry red wine
  • 3 large tomatoes, peeled and chopped
  • 2 tbsp tomato paste
  • ½ tspn sugar
  • 2 tbsp fresh parsley, chopped

Preparation and Cooking Instructions

  1. Shell and devein prawns, leaving the tails intact.
  2. Combine oil, butter, onion and garlic in large microwave-safe bowl; cook, covered on HIGH (100%) 4 minutes, stirring once during cooking.
  3. Add wine, tomato, paste, sugar and half the parsley; cook, uncovered, on HIGH (100%) about 15 minutes or until mixture thickens, stirring once during cooking.
  4. Add prawns; cook, covered, on MEDIUM (50%) about 10 minutes or until prawns change in color, stirring once during cooking. Serve sprinkled with remaining parsley.
  5. Serve with steamed rice, if desired.
