Tomato garlic prawns

Ingredients :
- 1kg medium uncooked prawns
- 1 tbsp olive oil
- 25g butter
- 1 medium red onion, finely chopped
- 3 cloves garlic, crushed
- 2 tbsp dry red wine
- 3 large tomatoes, peeled and chopped
- 2 tbsp tomato paste
- ½ tspn sugar
- 2 tbsp fresh parsley, chopped
Preparation and Cooking Instructions
- Shell and devein prawns, leaving the tails intact.
- Combine oil, butter, onion and garlic in large microwave-safe bowl;
cook, covered on HIGH (100%) 4 minutes, stirring once
during cooking.
- Add wine, tomato, paste, sugar and half the parsley; cook, uncovered,
on HIGH (100%) about 15 minutes or until mixture thickens,
stirring once during cooking.
- Add prawns; cook, covered, on MEDIUM (50%) about 10
minutes or until prawns change in color, stirring once during cooking.
Serve sprinkled with remaining parsley.
- Serve with steamed rice, if desired.
