Watercress salad

Ingredients :
- 1 bunch watercress
- 3 sticks celery
- 1 cucumber
- 3 medium oranges
- 1 Spanish onion, thinly sliced and pushed into rings
- ¾ cup chopped fresh chives
- ½ cup chopped pecans or walnuts
Dressing :
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 tspn grated orange rind
- 1 tspn seeded mustard
- ground pepper, to taste
- 1 tbsp honey
Preparation and Cooking Instructions
- To make salad : Wash and drain all vegetables. Break watercress
into small sprigs, discard the coarser stems. Cut the celery into thin
5cm long slices. Peel, halve and seed the cucumber and cut into 5mm
slices. Peel orange, remove white membrane, and divide into segments.
Place in refrigerator until needed.
- To make dressing : Combine oil, lemon juice, orange rind, mustard,
pepper and honey in a screw top jar. Shake vigorously until well combined.
Chill until needed.
- Combine all salad ingredients in a serving bowl. Pour over dressing
and toss. Sprinkle with pecans and walnuts.
