Ingredients :
- 400g can cannellini beans, drained
- 310g can corn kernels, drained
- 2 trimmed celery sticks, sliced
- 100g roasted capsicum, chopped
- 1 large (250g) avocado, chopped
for Chive Dressing
- 2 tbsp chopped fresh chives
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- salt and pepper
Preparation and Cooking Instructions :
- Combine the beans, corn, celery, capsicum and avocado in a large bowl.
- For chive dressing : Combine all ingredients in a screwtop jar and
shake well.
- Just before serving, add the chive dressing to the bean mixture and
toss salad gently.
