White Bean, Corn and Avocado salad

with chive dressing

Preparation Time : 15 mins. Serves : 6 to 8


Ingredients :

  • 400g can cannellini beans, drained
  • 310g can corn kernels, drained
  • 2 trimmed celery sticks, sliced
  • 100g roasted capsicum, chopped
  • 1 large (250g) avocado, chopped
    for Chive Dressing
  • 2 tbsp chopped fresh chives
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • salt and pepper


Preparation and Cooking Instructions :

  1. Combine the beans, corn, celery, capsicum and avocado in a large bowl.
  2. For chive dressing : Combine all ingredients in a screwtop jar and shake well.
  3. Just before serving, add the chive dressing to the bean mixture and toss salad gently.
