Ingredients :

  • 3¾ cups cake flour, sifted
  • 1½ tspn baking powder
  • 1¾ cups butter ~ DON'T use substitutes
  • 2 cups sugar
  • 1¼ cups egg whites, unbeaten ( about 10-12 eggs)
  • ½ tspn vanilla extract
  • ¼ tspn almond extract

Preparation and Cooking Instructions

  1. Sift flour once, measure, add baking powder and sift together three times.
  2. Cream butter thoroughly, add sugar gradually and cream together until light and fluffy.
  3. Add egg whites, ¼ cup at a time, beating well after each addition. Add flavoring and beat vigorously.
  4. Turn into two loaf pans 9"x5"x3" which have been greased, lined with heavy paper and again greased.
  5. Bake in slow oven (275°F) 40 minutes; then increase heat lightly (325°F) and bake 40 minutes.
