Whole wheat pizza dough

Serves : 4 x 8" or 2 x 12" pizzas


Ingredients :

  • 1 tbsp dry active yeast
  • ¾ cup warm water
  • 1 cup whole wheat pastry flour
  • 1½ cups unbleached all purpose flour
  • 1 egg, beaten
  • ½ tspn salt
  • 3 tbsp olive oil

Preparation and Cooking Instructions

  1. In a large bowl, dissolve the yeast in the water. Let rest for 10 minutes or until foamy. Add the whole wheat flour, ½ cup unbleached flour, the egg, salt and oil and stir into a smooth paste.
  2. Gradually knead in the remaining flour and continue to knead into a smooth ball. Let the dough rise for 15 minutes. Divide in half. Roll each half into a round on a lightly floured surface.
  3. Place each round into a lightly oiled pizza pan. Let rise 15 minutes longer. With your finger tips, press dough from center to edge of pan until the pan is completely covered by dough. The dough is now ready for sauce and topping.
