Serves : makes 8
Ingredients :
- 1½ cups plain flour
- 4oz butter, chopped
- 1 egg, lightly beaten
- 1 tbsp iced water
- 2 bacon rashers, finely chopped
- 1 small leek, thinly sliced
- 1 small onion, chopped
- ¾ cup cream
- ½ cup sour cream
- 2 eggs
- 1 tbsp cracked black pepper
- 5oz camembert cheese, thinly sliced
Preparation and Cooking Instructions
- Sift flour into bowl, rub in butter. Add egg and enough water to make
ingredients cling together. Knead dough on floured surface until smooth.
Cover and refrigerate 30 minutes.
- Divide pastry into 8 pieces, roll between sheets of baking paper to
line 8 x 10cm round flat tins. Press pastry into tins, trim edges, refrigerate
30 minutes.
- Cover pastry with baking paper, fill with dried beans or rice, place
on oven tray. Bake in moderately hot oven 10 minutes. Remove paper and
beans.
- Meanwhile, add bacon, leek and onion to pan, cook, stirring, until
onion is soft. Divide bacon mixture between pastry cases, pour over
combined creams, eggs and pepper; top with cheese. Bake in moderately
hot oven about 25 minutes or until lightly browned and set.
