Lemon Cheesecake ~ Limone torta di formaggio

Ingredients :

  • 14 oz sweetened condensed milk
  • ½ cup lemon juice
  • 1½ tspn freshly grated lemon peel
  • ¾ cup butter, softened
  • 1 cup packed brown sugar
  • 1½ cups all-purpose flour
  • 1 tspn baking powder
  • ¼ tspn salt
  • 1 cup quick oatmeal


Preparation and Cooking Instructions :

  1. Preheat oven to 350ºF.
  2. In a small bowl, mix condensed milk, lemon juice and peel. Set aside. In a large bowl, cream butter and sugar. Add flour, baking powder, salt and oatmeal. Mix until crumbly. Firmly press half of the mixture onto the bottom of a buttered 9" x 13" pan. Pour condensed milk mixture over the top.
  3. Cover with remaining crumb mixture and press down gently.
  4. Bake for 25 - 30 minutes. Chill and cut into squares.
