Ingredients :
- 1¼ lb dry fava beans, soaked overnight
- ½ onion
- 1 celery stalk
- 1 garlic clove
- 1 tomato
- 8 shrimp
- 3½ oz Ricotta cheese
- 1 ¾
- chili pepper powder
- 4 tbsp extra-virgin olive oil
- salt and pepper
Preparation and Cooking Instructions :
- Place the soaked beans in a large saucepan, cover with warm water
and add all the aromas: salt and pepper and 2 tbsp extra virgin olive
oil. Simmer for an hour.
- In the meantime shell the shrimp and sauté briefly with the speck.
Keep warm.
- When the beans are cooked pass them through the food mill with the
ricotta, 2 tbsp olive oil and the chili pepper.
- Divide the "macco" of beans onto 4 plates and place 2 shrimp and 2
slices of speck on each.
- Decorate with a little olive oil and a grinding of fresh pepper.
