Sweet Potato pie ~ recipe 1
Ingredients :
- 3 eggs
- ½ cup white sugar
- ¼ cup butter, melted
- ½ tspn salt
- ¼ cup milk (about)
- 1 tspn vanilla extract
- 1 tspn ground cinnamon
- 1 tspn ground nutmeg
- 2½ cups sweet potatoes, cooked and mashed (heaped cups)
- 2 tbsp fresh lemon or orange juice
- 1 9" pie shell, unbaked
- ½ cup pecan halves ( optional )
Preparation and Cooking Instructions
- Beat eggs and sugar.
- Add melted butter, salt, milk, vanilla, and spices.
- Blend egg mixture with mashed sweet potatoes and lemon/orange juice.
- Pour into the unbaked pie shell or greased 1½ quart baking
dish.
- Garnish with pecan halves ( optional )
- Bake in preheated 400°F oven for 10 minutes.
- Reduce the oven temperature to 375°F.
- Bake 40 minutes longer or until golden. Serves 6 to 8.

Ingredients :
- 3 tbsp margarine
- ¼ tspn cinnamon
- ¼ cup sugar
- 3 large sweet potatoes, cooked, mash
- ¼ tspn salt
- 1 cup skim milk
- 1 egg yolk
- 3 egg whites, beaten stiff
- 3 tbsp lemon juice
- 1 x 9" unbaked pie shell
- 1 tspn lemon peel
Preparation and Cooking Instructions
- Use about 1½ lb of the mashed sweet potatoes.
- Heat oven to 350°F.
- Beat together margarine, sugar, and salt.
- Add egg yolk, lemon juice, lemon peel and cinnamon.
- Stir in sweet potatoes and milk. Mix well.
- Fold in egg whites and pour into pie shell.
- Bake for 40 to 50 minutes or until knife inserted in center comes
out clean.
- To reduce saturated fat, use a homemade pie shell made with vegetable
oil.
