Cooking Cajun Food - Blackened Red Snapper recipe

Ingredients :

  • 2 tspn onion powder
  • 1½ tspn garlic powder
  • 1 tspn dry mustard
  • 1 tspn ground thyme
  • 1/8 tspn pepper
  • 2 tspn crushed pequin chili
  • 4 x 4 oz fillets red snapper


Preparation and Cooking Instructions :

  1. Combine onion powder, garlic powder, dry mustard, ground thyme, pepper, & chili.
  2. Sprinkle one side of each fillet with half of this mixture.
  3. Coat a large cast iron skillet with cooking spray; place over medium high heat until hot.
  4. Add fillets, seasoned side down, & cook 4 minutes.
  5. Sprinkle fillets with remaining onion powder mixture. Turn fillets over & cook 3 minutes or until fillets are blackened & flake easily when tested with a fork.
