Ingredients :
- 3 lb chicken pieces
- salt and pepper, to taste
- paprika, to taste
- 3 - 4 green bell peppers, cut in strips
- 3 - 4 tomatoes, cut in wedges
- 1 Spanish onion
- 1 stick butter, cut into pieces
Preparation and Cooking Instructions :
- Turn on broiler to heat.
- Place the chicken in an ovenproof pan and sprinkle with herbs. Be
liberal with the paprika.
- Place the chicken parts, bone side up, in the pan.
- Sprinkle the vegetables around the chicken, tucking them in any available
spaces.
- Dot chicken and vegetable with butter.
- Place in a preheated broiler and cook for 10 minutes.
- Turn chicken pieces and baste vegetables with juices.
- Return to broiler for an additional 10 minutes.
- If the juices run pink when the chicken is pricked with a fork, reduce
the temperature to 375°F and bake in the oven for 5-10 minutes.
