Cooking Cajun Food - Cajun Oyster Pie recipe

Ingredients :

  • 1 pint oysters in their own juice (shucked)
  • ½ cup chopped green bell pepper
  • ½ cup chopped celery
  • 1 tspn Tabasco sauce
  • ¼ tspn filé powder
  • 4 tbsp butter
  • 5 tbsp flour
  • 2 cups hot milk
  • 1 tspn salt
  • 1 tspn fresh ground black pepper
  • 2 tbsp chopped pimiento


Preparation and Cooking Instructions :

  1. Simmer oysters in their own juice for 5 - 7 minutes, or until the edges begin to curl.
  2. Sauté peppers & celery in butter until tender.
  3. Blend in the flour, add the milk & cook stirring until the sauce thickens.
  4. Add the oysters, pimientos, the seasonings and stir together gently.
  5. Pour this into a buttered casserole, top with pie pastry.
  6. Bake in 450°F preheated oven for 20 minutes or until the crust is brown.
