Ingredients :
- 1 tbsp corn oil
- ½ cup sliced mushrooms
- ¼ cup onion,coarsely chopped
- ¼ cup green bell pepper,coarse chop
- 2 cups tomatoes,chopped
- ½ tspn basil,dried
- ¼ tspn black pepper
- 1 lb cod, cut into 1" cubes
Preparation and Cooking Instructions :
- In medium skillet, heat corn oil over medium heat.
- Add mushrooms, onion and bell pepper; stirring frequently, cook 2
to 3 minutes or until tender.
- Add tomatoes, basil and black pepper; stirring occasionally, cook
10 minutes or until sauce is thick.
- Place cod in 10" x 6" x 2" baking dish; spoon sauce over fish.
- Bake in 350°F oven 15 to 20 minutes or until fish flakes easily.
