Ingredients :
- 1¼ cups all-purpose flour
- 1 tbsp baking soda
- ½ tspn ground cinnamon
- 1/8 tspn salt
- 1 cup sugar
- ½ cup vegetable oil
- 1 large egg
- 2 tbsp fresh lemon juice
- 1½ tspn vanilla extract
- ¾ tspn grated lemon peel
- 2 cup green apples, coarsely grated peeled
- ½ cup chopped toasted pecans
Preparation and Cooking Instructions :
- Preheat oven to 350°F. Grease ½ cup muffin cups.
- Sift all purpose flour, baking soda, ground cinnamon and salt into
medium bowl.
- Combine sugar, oil, egg, lemon juice, vanilla and lemon peel in large
bowl; whisk to blend.
- Mix in dry ingredients, then apples and pecans.
- Spoon 1/3 cup batter into each prepared muffin cup.
- Bake until tester inserted into centers comes out clean, about 35
minutes.
- Turn muffins out onto rack; cool slightly. Serve warm.
