Ingredients :

  • 2 egg whites, whipped
  • 3 tbsp applesauce, at room temperature
  • 3 tbsp honey
  • 3 tbsp molasses
  • 3 tbsp orange juice, at room temperature
  • 1 tspn vanilla
  • 1 cup mashed banana (about 2)
  • 1 cup flour, sifted
  • 1 tbsp orange peel, grated
  • ½ tspn baking powder
  • ½ tspn baking soda
  • 1 cup cranberries, chopped


Preparation and Cooking Instructions :

  1. Preheat oven at 350°F. Prepare muffin pans with cooking spray and flour.
  2. In a mixing bowl, combine egg whites, applesauce, honey, molasses, orange juice, vanilla, and banana.
  3. In another mixing bowl, combine the flour, baking powder, baking soda and cranberries.
  4. Form a well in the flour mixture, pour in liquid mixture and combine both.
  5. Use an ice cream scoop to fill medium muffin pans to 2/3 and bake for 20 to 25 minutes.
