Ingredients :
- 2 egg whites, whipped
- 3 tbsp applesauce, at room temperature
- 3 tbsp honey
- 3 tbsp molasses
- 3 tbsp orange juice, at room temperature
- 1 tspn vanilla
- 1 cup mashed banana (about 2)
- 1 cup flour, sifted
- 1 tbsp orange peel, grated
- ½ tspn baking powder
- ½ tspn baking soda
- 1 cup cranberries, chopped
Preparation and Cooking Instructions :
- Preheat oven at 350°F. Prepare muffin pans with cooking spray
and flour.
- In a mixing bowl, combine egg whites, applesauce, honey, molasses,
orange juice, vanilla, and banana.
- In another mixing bowl, combine the flour, baking powder, baking soda
and cranberries.
- Form a well in the flour mixture, pour in liquid mixture and combine
both.
- Use an ice cream scoop to fill medium muffin pans to 2/3 and bake
for 20 to 25 minutes.
